Another awesome pumpkin dessert!

can (15 oz) pumpkin (not pumpkin pie mix)
1
  can (12 oz) evaporated milk
3
  eggs
1
  cup sugar
4
  teaspoons pumpkin pie spice
1
  box yellow cake mix
1 1/2
  cups chopped pecans or walnuts
3/4
  cup butter or margarine, melted
Whipped cream, if desired
Additional pumpkin pie spice, if desired
  1. Heat oven to 350°F (325°F for dark or nonstick pan). Grease or spray bottom and sides of 13x9-inch pan. In medium bowl, beat pumpkin, milk, eggs, sugar and 4 teaspoons pumpkin pie spice with wire whisk until smooth. Pour into pan.
  2. Sprinkle dry cake mix over pumpkin mixture. Sprinkle with pecans. Pour melted butter evenly over top.
  3. Bake 50 to 60 minutes or until knife inserted in center comes out clean. Cool 30 minutes.
  4. Serve warm or chilled with dollop of whipped cream sprinkled with pumpkin pie spice. Store covered in refrigerator.

Things that are pissing me off November 2, 2011 edition

A current list of things that are making me want to stab people in the throat.

     1. Nickelback. Seriously, all their damn music sounds the same, along with 3 Doors Down. Nothing either of them release is new or exciting or good. It's all crappy, manufactured music with no substance.



     2. This crummy cold weather. I hate winter time and the cold, it makes me depressed.

     3. People who ask a question then don't listen to the answer or who completely ignore what you tell them. I'll tell you twice, after that, it's all on you. I refuse to waste my breath.

     4. People who don't watch their children. You had the kid, now parent the child. I do not get paid to babysit and run after your crotch-spawn. I think you should have to take a mandatory class in order to have children. There are too many dumbasses out there breeding right now.

     5. Bosses who are all in your face and personal space. What I do on my computer or phone is none of your business, butt out. And you look like the asshole you are when I tell you I'm hard of hearing and ask you to please speak more softly when I'm on the phone, and you choose to ignore me. Dick.

    6. The fact that Christmas is coming. I hate the holidays with the fury of a 1,000 fiery suns.

    7. People who dole out crappy, ignorant advice like it's Halloween candy. You're an idiot and extremely ill-informed.

    8. Here's a big one! Men who don't respect their women. Show some love and respect to your spouse or partner. I'm willing to bet that you'd be hard pressed to find someone else willing to put up with your shit. And that's what it is, stupid man-shit. So stop acting like an asshole and start acting like a man. Love her, respect her, show her she's your one and only. You're going to run her off if you don't.

Just another day

Good news: Michael got the job with CSX! Yay! Bad news: he'll be gone for 6 weeks for school in Atlanta. And he'll be working a lot of nights and weekends when he gets back to town. But we'll have a good insurance and he'll have good benefits.

I had an interview today but I don't think it went very well. The hr manager seemed annoyed that I didn't have my computer experience listed on my resume and that I've had quite a few jobs. I had to explain to her the reason why I've had quite a few jobs was because my husband was in the military and we were relocated to Norfolk, then back here. I'm hoping and praying that I'm wrong and that I do get the job. It's better hours and would work out much better for us, especially with Michael going to be gone. I have another interview Saturday in case this place doesn't pan out.

I saved this to come back to it since I got busy here for a bit.

A customer's nurse came in asking us to look at the patient's phone because it won't allow them to delete a photo, it's locked somehow. The photo in question is of his male friend's frontal area, unclothed. I need massive amounts of brain bleach and a grapefruit spoon to dig my eyeballs out now. If you readers are the praying kind, please say a prayer I find another job asap.

You can't take it with you...

We're broke, we're poor as hell. But we've got each other and we're happy. I wouldn't give up my life for anything because as stressful as it is, I've got people who love me and hold me up.

Money does not equal happiness. Money can not buy you love. And when you die, you can't take all of your material things with you. So here's my advice if this pertains to you: Shut your damn mouth and stop with the bragging. It doesn't make you look or sound cool. It makes you out to be a jackass who no one wants to be around. Seriously, it's old and I'm over it.

I'm a firm believer that if you're constantly bragging about things, you're probably covering up how much your life sucks, like the rest of ours do. You're trying to convince everyone, along with yourself just how damn happy you are and let me tell you, you're not fooling me one bit. No one cares about what you wear, what you drive, how big your house is, how much money you make. Let me repeat that, no one gives a shit.

Let's wrap this lesson up!

Bragging = asshole = no one gives a shit = no friends = you shouldn't be surprised.

Oh Lawd, it's one of those days.

So I opened the Etown store alone today. No big deal, I've opened alone before right? WRONG Buckwheat. I think I'll just do bullets so you all can see how my day has went slightly downhill from the time I got here this morning.

  • I set the alarm off first thing when I got here. I don't know if I was too slow or I typed in the wrong code in my panic or what the hell happened. All I know is I had to listen to the blaring siren for 10 minutes before the alarm people could get the bastard shut off.
  • I got sprayed by the automatic air freshener. So now I smell like a supposed Hawaiian beach but I'm calling bs on that one.
  • My cash drawer was short 10 bucks right off the bat.
  • I had 2 customers come who wanted to return a phone because they didn't like it and buy a new one. Ok, no problem. I issued them a refund check. Explain the price of the new phone, they get pissed off and want the new phone for $30 less. I explain, hell no, not doing it. They want to go BACK to the old phone. I explain they're going to be stuck here with me for a while because I have to call the help desk to have the refund reversed. They flip out and shouting commences. Help Desk fixes everything and marks down new phone to shut them up and get them the hell out of my store. Thank God for the Help Desk.
  • I'm out of pop and in dire need of caffeine. 
  • I forgot to clock in with all the craziness that was going on around here today. I finally clocked in around 1 and I've actually been here since about 8:45am.
  • And I'm whiny because my feet hurt. I don't have a chair to sit in here at this store.
Here's to hoping today will only get better from here on out. I'm going to Applebee's for quesadillas to hopefully cheer myself up.

Things that are annoying me: October 19, 2011 Edition

  1. If you call looking for my boss and I tell you he'll be back in a hour, do not call back 15 minutes later asking if he is in. Unless he's got a friggin teleporter, it will take him that long to drive back to this store.
  2. Please come in with at least some damn idea of what you are looking for. I am not a psychic. If I were, don't you think I'd be living on my own private island somewhere, not selling cell phones?!
  3. Do not cop an attitude because you didn't listen to what I said.
  4. When people talk about me like I'm not there in front of them. Fool, I can hear you!
  5. The public in general.
  6. The rain is making me crabby. But it may be my awful customers.

I'm sure that I'll come up with more and I'll update this post as the day goes on!

I heard this song for the first time the other day. It's a few years old but it's by one of my favorite bands. I heard it and got teary eyed because it reminds me so much of Michael, it's a song for us.

When we first started dating, and he would stay over with me, we'd put Staind on before we fell asleep. The cd we had always got stuck and would skip in the same place every single night. So one of us would get up, start the cd over and go back to bed. It's so funny looking back on that right now but everytime I hear a Staind song, it takes me back to that time.

It takes me back to a time where we didn't have near as many things to worry about but it makes me smile because we've been through so much in just six short years. I wouldn't trade our time and experiences together for nothing in this world. We've stuck together and stuck out some rough times. We're in some rough times right now but I know that as long as we have each other, we can make it through anything life throws our way.

This man is my soulmate and I love him so much, I couldn't ask for a better husband or a better father for our son.

Rants

This post is going to be a list of things currently pissing me off.

*This head cold mess I've got going on.

*The fact that this Friday and Saturday I'll be by myself working open to close. Not digging that idea. And I think they're trying to screw me on Halloween. I'm not missing Boo's first Halloween.

*Did I mention I hate hate hate being sick? It screws with my routine way too much.

*My job in general. There's way to much to get into here but those closest to me know what kind of bs I'm dealing with on a daily basis.

*My house is a mess and it's driving me batty. After I get off work though, I have zero motivation to clean. Or cook.

*People who call and hang up. Especially if I don't know who it is calling. If you don't leave a message, just assume I will not be calling you back.

*Judgemental assholes. Or the people who think they're perfect and can do no wrong.


I think that's it for now. I've just had one of those days where the wind could blow wrong and piss me off.

Pumpkin chocolate chip cookies!

I'm feeling generous so here is the recipe I use for pumpkin chocolate chip cookies. They're wonderful, light and fluffy, almost cake-like. Enjoy!

Pumpkin Chocolate Chip cookies
1- 15 oz can pumpkin
2 eggs lightly beaten
2 cups sugar
1 cup vegetable oil
2 tsp milk
2 tsp vanilla
1 tsp salt
2 tsp baking soda
2 tsp cinnamon
12oz package milk chocolate chips

Combine all of these ingredients in a large bowl.


In a separate smaller bowl combine:
4 cups flour
4 tsp baking powder

Slowly combine the flour/baking powder into the cookie mixture.
Preheat oven to 375 degrees. Use 2 spoons to drop cookie mixture onto sheet pans.
Bake for 10-15 minutes.

I recommend storing the mixture in the fridge in between batches. It gets runny if left out too long.

So my kiddo is sick

Boo is sick with a cold. He's so pitiful when he's sick and I can't say as I blame him. Poor baby. I think he got it from me, who got it from my boss, who couldn't keep his sorry, sickly ass at home! Go to the doctor fool! I'm bringing in my own lysol to spray everything down so we don't get sicker *grumbles*.

One of my biggest pet peeves, if you're sick, stay home! Seriously. I don't like you and I sure as hell do not want to share your nasty cold cooties. I have a 10 month old who doesn't want to share your cold cooties too. I swear people don't friggin think before they do something.

So, I'm trying to decide how public or how private I was this venture to be.

I can keep it extra private and vague. Or I can be completely open and honest and risk pissing people off.

I lack the ability to sugarcoat things and have a tendency to be loud and in your face. It's just my nature, I can't help it.

I also don't quite know where to start with the posts! Do I post a rant first, or a sweet post? Or should I start with a recipe or just a general rambling? Aauuggh such choices!
